Palak paneer

  • 2 cups fresh spinach leaves, washed and chopped
  • 200g paneer, cubed
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 green chillies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp garam masala powder
  • Salt, to taste
  • 2 tbsp oil
  • 1/2 cup water
  • 2 tbsp heavy cream (optional)

Instructions:

  1. Heat oil in a pan and add the cumin seeds. Saute until they begin to splutter.
  2. Add the chopped onion, minced garlic, grated ginger, and chopped green chillies. Saute until the onions become soft and translucent.
  3. Add the coriander powder, turmeric powder, red chilli powder, and salt. Mix well.
  4. Add the chopped spinach leaves and stir well. Cook on low heat until the spinach wilts down and becomes soft.
  5. Let the mixture cool down and blend it into a smooth puree using a blender or food processor.
  6. Return the puree to the pan and add water as needed to adjust the consistency.
  7. Add the cubed paneer and stir gently to mix.
  8. Cook on low heat for 5-7 minutes, or until the paneer is heated through and the flavors are well combined.
  9. Stir in the garam masala powder and heavy cream (if using).
  10. Serve hot with rice or naan.
