Palak paneer

- 2 cups fresh spinach leaves, washed and chopped
- 200g paneer, cubed
- 1 onion, chopped
- 2-3 garlic cloves, minced
- 1 inch ginger, grated
- 2 green chillies, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/4 tsp garam masala powder
- Salt, to taste
- 2 tbsp oil
- 1/2 cup water
- 2 tbsp heavy cream (optional)
Instructions:
- Heat oil in a pan and add the cumin seeds. Saute until they begin to splutter.
- Add the chopped onion, minced garlic, grated ginger, and chopped green chillies. Saute until the onions become soft and translucent.
- Add the coriander powder, turmeric powder, red chilli powder, and salt. Mix well.
- Add the chopped spinach leaves and stir well. Cook on low heat until the spinach wilts down and becomes soft.
- Let the mixture cool down and blend it into a smooth puree using a blender or food processor.
- Return the puree to the pan and add water as needed to adjust the consistency.
- Add the cubed paneer and stir gently to mix.
- Cook on low heat for 5-7 minutes, or until the paneer is heated through and the flavors are well combined.
- Stir in the garam masala powder and heavy cream (if using).
- Serve hot with rice or naan.
